Annual Party
Annual Party, is a traditional festival in west of Guangdong, especially in Maoming, my hometown. In general, it lasts mainly from January 2nd to the end of January. In general, a village is held on the same day for a same village. Different villages may also hold Annual Party on the same day. By the Qing Dynasty, it was already very popular. Relatives and friends are usually not in contact with each other all year round, but on the day of Annual Party, no matter whether they are rich or poor, they will hold a banquet to invite their relatives and friends. Friends also go to each family in groups to visit, eat, the atmosphere of the New year is rich. Every year, every family racked their brains to arrange dishes, generally there
will be many dishes, greatly enriched local cuisine varieties. Even the local people say that New year's Annual Party is more important than New year. The theme of the New year's example is that the weather is smooth and the people are safe. On Annual Party, the streets of villages and towns are decorated with lights, and each family warmly invites their relatives and friends to be the host. They also send red envelopes to the children of the guests. There are many activities, such as swimming spirits, lighting lights, Cantonese opera, singing and dancing performances, and setting off fireworks and firecrackers, until all the night long. With the development of society, the tradition of the years also changes. Many places are gradually getting used to \"making annual party\into \"eating on the Annual Party\". This festival still has a deep complex in the eyes of our Maoming people, and it is also of great importance and meaning to us.
Beef brisket noodles
Beef brisket noodles is a flavor snack in Guangxi Province and parts of Guangdong Province. It was known for its special practice before the reform and opening up. In fact, There are slightly different samples in different places. For example, in Guangxi, rice noodles are mainly used. In Maoming, my hometown, the practice is relatively simple. The main materials are beef brisket and river noodles. The seasoning consists of onion and ginger, etc. The procedure is to wash the brisket and put it into a pot for 30 minutes, then remove it and cut it into small pieces and stir in the season. Then, put the river powder in the broth that has boiled the beef brisket and cook for a few minutes. Finally, put the brisket and the noodles in a bowl. The brisket is placed on the surface of the noodle. That's it.
There is a legend about beef belly noodle. It is said that there is a middle-aged man who is poor and his wife can't bear to leave him, leaving their children and old mother. However, the man used all his savings to open a rice noodle shop. As a result of poor business, all we had to eat was porridge, which led to hunger all day long. The Bodhisattva in the sky sympathized with the family. Later he told the man a special way to make rice noodles. The next day, the man made rice noodles according to Bodhisattva's method and sold them out. Gradually, the family lived a good life. After the man died, This method has spread among the people, because
the raw materials are rice flour and Brisket, so they call it beef noodle.
